Sopes

Our traditional Mexican sopes are a must try for your next meal! They are the perfect pairing of bold flavors and textures, making each bite unforgettable. 🌶️

Ingredients:

• Tortilla flour (follow instructions on the bag our favorite is @kingarthurbaking
• 1 lb chicken or beef (shredded)
• Black or pinto beans (cooked)
• Chopped lettuce
• 1 red onion (chopped and pickled with salt and lime)
• Queso fresco (crumbled)
• 1 avocado (sliced)
• Sour cream
• Salsa macha
• Oil for frying

Instructions:

1. Make the tortillas: Follow the instructions on the tortilla flour package to make the dough. Shape the dough into thick small rounds (about the size of your palm) for sopes.
2. Cook the meat: Cook your choice of chicken or beef, then shred it. Set aside.
3. Prepare the beans: Mash them lightly to create a spreadable texture.
4. Pickle the onion: Chop the red onion, sprinkle with a pinch of salt and a squeeze of lime juice. Let it sit to pickle while preparing the other ingredients.
5. Fry the sopes: Once your tortillas are made, fry them in your favorite oil until crisp on the outside but still soft in the center. Drain on paper towels.
6. Assemble:
• Spread a layer of mashed beans on each sope.
• Add a generous portion of shredded chicken or beef.
• Top with chopped lettuce, pickled red onion, crumbled queso fresco, avocado slices, and a dollop of sour cream.
• Drizzle with salsa macha for the final touch! @salsamachalaguera
