Healthy Turkey Nachos

Ingredients:

• Ground Turkey Mixture
• 1 tablespoon avocado or olive oil
• 1 pound ground turkey
• 4 cloves minced garlic
• 1/2 cup diced onion
• 1 tablespoon tomato paste
• 1 teaspoon apple cider vinegar
• 1 tablespoon ground cumin
• 1/2 tablespoon chili powder
• 1 teaspoon paprika
• 1 teaspoon oregano
• 1/4 teaspoon crushed red pepper flakes
• 1 teaspoon salt
• 1 teaspoon arrowroot starch
• 1/4 cup chicken broth
• Nachos:
• Tortilla chips @latejulyorganic
• 1 cup black beans
• 1/2 cup pico de gallo
• 1/4 cup sour cream @good_culture
• 1/4 cup guacamole
• Salsa macha for drizzling

Instructions:

1. Prepare the Ground Turkey:
• Heat the avocado or olive oil in a skillet over medium heat.
• Add the diced onion and minced garlic, and sauté until softened.
• Add the ground turkey and cook until browned, breaking it up with a spoon as it cooks.
• Stir in the tomato paste, apple cider vinegar, cumin, chili powder, paprika, oregano, crushed red pepper flakes, and salt.
• In a small bowl, mix the arrowroot starch with the chicken broth until dissolved, then add to the skillet.
• Stir well and cook until the mixture is well combined and thickened. Set aside.
2. Assemble the Nachos:
• Arrange tortilla chips on a large plate
• Spoon the seasoned ground turkey evenly over the chips.
• Add a layer of black beans, then top with pico de gallo.
• Dollop with sour cream and guacamole.
3. Finish with Salsa Macha:
• Drizzle salsa macha over the top for a spicy, flavorful kick.
4. Serve and Enjoy:
• Serve immediately and enjoy your healthy nachos!
